Harvest: Manual, with varietal selection in the second half of September. The harvest occurs separately, depending on the ripeness of the different varieties.
Aging: 12 months in French durmast barriques followed by 3 months in the bottle.
Colour: Intense ruby red.
Aroma: Lasting, ample, alongside the aroma of red berries one can perceive the lightly spicy notes typical of the Syrah as well as vanilla, coffee, and tobacco due to the aging in wood.
Flavour: Decisive but soft, well structured, with smooth tannins that caress the palate, notes of vanilla.
Pairings: Goes well with savoury first courses, braised meats, as a meal closer with aged cheeses. Open the bottle a few hours before it is served. Serve at 18° C.
