The name was inspired by Genesis (1991), the site-specific art work by Greek artist Costas Tsoclis which belongs to the Gori collection. The piece is located near the olive trees of the Slow Food Presidium. It is composed of two large spheres sitting in a stable, looked over by a clock without hands that marks an indefinite time. A mystery that is about to be revealed is observed and awaited: something is about to be born.
Genesis, or beginning, calls back to the olive tree, a patient tree, which seems to have always been present on these lands and which has the ability to always regenerate.

Genesis Oil

Olive variety: Leccino, Frantoio, Moraiolo and Rossellino.

A small-scale olive oil production produced in an area owned and protected by the Fattoria di Celle, which, in 2020, became a Slow Food Presidium.
